米中含有的淀粉。颗粒为多角形,直径 3~8μm。糊化温度 68~78℃。主要用作婴儿食品的辅料。大米淀粉主要作为增稠剂、填充剂、赋型剂和功能因子应用于食品工业和医药工业中,即使其用量比例很高也不致影响食品或药品的风味,同时能以米淀粉为原料。
