异硫氰酸丙烯酯：（Allylisothiocyanate）用于制备食品添加剂、医药、杀虫剂、杀菌剂等的物质。
俗称人造芥子油。是芥子辛辣味的主要成分，无色或浅黄色油状液体，能与醇、醚、苯和二硫化碳相混溶，不溶于水。许多十字花科植物都含有芥子苷，在水解时会产生葡萄糖及芥子油；芥子油是异硫氰酸丙烯酯及其类似物的总称。可用作食用调味剂和某些保健食品的原料。
It is commonly known as artificial mustard oil. It is the main component of mustard with pungent taste. It is colorless or light yellow oily liquid, miscible with alcohol, ether, benzene and carbon disulfide, and insoluble in water. Many cruciferous plants contain glucosinolates, which can produce glucose and mustard oil when hydrolyzed; Mustard oil is the general name of propylene isothiocyanate and its analogues. It can be used as food flavoring agent and raw material of some health food.
