限制氨基酸:(Limiting Amino Acid)指食物蛋白质中必需氨基酸。
物蛋白质中一种或几种必需氨基酸含量相对较低,影响了其他氨基酸被利用的氨基酸。其中相对含量最低的为第一限制氨基酸。植物蛋白质中,赖氨酸、蛋氨酸、苏氨酸和色氨酸含量相对较低,为植物蛋白质的限制氨基酸。谷类食物的赖氨酸含量最低,为谷类食物的第一限制氨基酸。
