胱氨酸：（Cysteine）胱氨酸）协助皮肤的形成，且对解毒作用很重要，借由减低身体吸收铜的能力，胱氨酸保护细胞免于铜中毒。当它被代谢时，会释放硫酸，而硫酸会与其他物质产生化学作用，增加整个代谢系统的解毒功能。
两个半胱氨酸通过其侧链巯基氧化成二硫键后形成的产物。含有两个手性中心，不溶于水，可形成尿结石。蛋白质中的L-胱氨酸在肽链形成后，由两个半胱氨酸残基氧化形成。与半胱氨酸同属非必需氨基酸，半胱氨酸含有巯基，胱氨酸含有二硫键，二者可以相互转变。L-胱氨酸是蛋白质的组成成分。一般蛋白质含量不多，富含于毛发、蹄甲和皮肤角蛋白中。在体内可由蛋氨酸合成，食物提供足够的胱氨酸可减少蛋氨酸的需求量。
