瓜尔豆胶：（Guar Gum Cyamopsis Tetrago-Nolobus）从瓜尔豆的胚乳中提取出的一种非离子型半乳甘露聚糖。
称瓜尔胶。一种由瓜尔豆提制的胶质。瓜尔豆为一种豆科植物。原产非洲，广布于东南亚和南亚，中国云南、广西等地也有种植。瓜尔豆胶是良好的增稠稳定剂。主要成分是由半乳糖和甘露糖按1∶2比例构成的半乳-甘露聚糖，还含有蛋白质、脂肪及膳食纤维等。灰白色粉末。耐高温。溶于水成黏稠液。溶液pH3～10时稳定，若长时间加热其黏度显著降低。通常与鹿角菜胶、果胶等混合用于冰淇淋、罐头食品、调味汁、干酪、番茄酱等。
